Stevia

Enzyme-treated stevia is produced by transferring the glucosyl group to various steviol glycosides during the activation of glycosyltransferase with dextrin as a substrate and the stevia extract as the receptor. Enzyme-treated stevia contains up to 15 glucosyl groups and thus improves the bitter aftertaste of stevia extract and improves acceptability. As such, it is widely used in almost all types of food products.

Steviol Glycoside

Steviol glycoside is a natural sweetener extracted and refined from stevia, a perennial herb in the same family as the chrysanthemum. It consists of nine components, including stevioside, rebaudioside A, dulcoside A, rebaudioside B, rebaudioside C, rubusoside, and steviolside.

This product has a smallest molecular weight and good permeability to food among the steviol glycoside products and thus is useful in pickles for fast permeability and salt purification effects. A mixture of steviol glycoside and dextrin are used in pastes and sauces.
