01. what is STEVIA?

Stevia is a perennial shrub that grows up to 1 m tall and has leaves 2-3 cm long. It belongs to the Aster family, which is indigenous to the northern regions of South America . It is estimated that as many as 200 species of Stevia are native to South America; S. rebaudiana is grown commercially in many parts of Brazil , Paraguay , Uruguay , Israel , Thailand and China .
Stevia has been used to sweeten the traditional drink mate for 400 years or longer. Stevioside, 6-18% composing of the stevia leaf, is also the most prevalent glycoside in the leaf and has been tested to be approximately 300 times sweeter than sugar. Other sweet constituents include steviolbioside,

02. Benefits of Natural Stevia sweeteners
The sweetness of a stevia-based sweetener varies with the purity of the stevioside products. The sweetness of pure stevia having a Steviol glycoside content of 85% or higher, is reported to be 200 to 300 times stronger than that of sugar. It has been confirmed that using stevia products with sugar, sugar alcohols and other intensive sweetener boosts the sweet taste. Stevia sweetener provides a concentrated amount of quality sweetness and the natural origins as a plant product make it safe and healthy.

Stevia sweeteners provides a moderately sweet taste compared to sugar. Conventional stevia sweeteners can replace not more than 20-30% of sugar. However, Daepyung Steviten-series can replace as much as 50-80% of sugar at low cost for its natural sweetness or flavor.
¨è Ices
Stevia sweeteners do not make ices sticky. Since they reduce the amounts of sugar in ices, they does not cause the decrease in freezing point. Stevia sweeteners help to minimize the deformation of ices and reduce the cost of freezing.
¨é Chewing gums and candies
Stevia sweeteners can be used for manufacturing sugarless, low-calorific chewing gums and candies in combination with sugar alcohols such as xylitol, erythritol and maltitol.
¨ê Canned fruits and fruit jellies
Stevia sweetener can reduce amounts of sugar to be used in canned fruits and fruit jellies. A light sensory of flavor and taste of fruits can be increased. Stevia sweeteners are well accompanied with fruit acid tastes, and reduce the calorific values of canned fruits and fruit jellies at similar sweetness.

03. Safety of Stevia sweeteners
Stevia's safety was proven through extensive scientific studies and currently it has been widely used in Korea , Japan , China , South America , Germany , Malaysia , Israel , etc. However, JECFA reviewed stevioside again in 2004, and permitted a temporary Acceptable Daily Intake (ADI) at 2mg/kgbw for steviol glycosides.
The Committee required additional information on the pharmacological effects of steviol glycosides in humans by 2007. These studies only involve the repeated exposure to dietary and therapeutic doses in normotensive and hypotensive individuals and in insulin-dependent and insulin independent diabetics for steviol glycosides. All documentation as per requirement will be submitted by early 2007 and it will be listed in CODEX soon. |

Q How do Stevia, Stevioside and Rebaudioside differ from one another?
A Stevia is a common name for stevia sweeteners. It may also mean a plant of stevia. Stevioside is the active ingredient of a stevia sweetener. It has a strong sweet taste but is bitter and astringent. Rebaudioside A is stevioside derivative to which glucose is bound. Rebaudioside A also has strong sweet and an excellent taste, free of bitterness and astringency. Conventional stevia sweeteners also contain Rebaudioside A in minute traces. The content of Rebaudioside A in Daepyun's stevia sweeteners has been substantially increased by Daepyung's technology.
Q What is the calorific value for stevia?
A The calorific value of stevia sweeteners is about 4 kcal per gram, as is the calorific value of sugar. However, since stevia is 200 to 300 times as sweet as sugar, it is virtually non-calorific and has little calorific effect.
